RECIPE

  • 18g fine grind coffee

  • 36g water 

Step-by-step guide  

  1. Take the portafilter out of the machine and give it a quick clean with a towel

  2. Flush the machine by running some water through the machine

  3. Place the portafilter on the scales and zero

  4. Put 18g of freshly ground coffee into the basket and distribute the coffee evenly

  5. Use your body weight to tamp and evenly distribute the ground coffee in the basket

  6. Dust grounds off the the rim of the basket

  7. Twist the portafilter into the group head

  8. Place coffee scales and a cup under the spouts

  9. Press the double shot button and start the timer

  10. With this recipe, we aim to extract the espresso in 28-32 seconds with a total espresso weight of 36g (1:2 ratio)

  11. If the espresso extracts short of 28 seconds, the coffee is too coarse. Adjust the grind size to make it a little finer

  12. If the espresso extracts longer than 32 seconds, the coffee is too fine. Adjust the grind size to make the coffee a little coarser

  13. Stop the machine when the scale reads around 34 grams (to accommodate for the delay of the scales)

  14. Let it drip to 36 grams

  15. Stir the espresso
